Ok hands up I love donuts. If I could eat them every day and not put on weight I would .. plus the lovely gooey dough is delicious .. the gluten plays havoc on my digestion though, so when I do indulge I do it knowing they’re not good for me.

So when I discovered that I could make something very close to the real thing, gluten free, dairy free, refined sugar free and vegan .. I simply had to give them a go !! I think they are a winner which is why they’ve made it to my blog .. I hope you enjoy them too.

You will need:

1 tin Chickpeas - 400g

2 cups ground Almonds - 200g

100g ground Flax/Linseed

80g Tapioca flour

50g Coconut flour

100g Coconut sugar (optional)

2 tsp Baking powder

1 tsp Bicarbonate of soda

1 cup Oat Milk - 250ml

60ml Coconut Oil

1 tsp Vanilla extract

Toppings :

150g dark chocolate, melted

6 Mejool dates, liquidised with water to form ‘caramel’

Sesame seeds, cocoa nibs, for sprinkling

Preheat the oven to 180 degrees

Drain the chickpeas well, reserve the liquid. Whisk the liquid until it goes thick and fluffy. Set aside.

In a separate bowl place the ground flax and 80 ml’s water, mix well and set aside. This mixture may go dry as the flax absorbs the water. If this is the case, add a bit more water so that it’s not quite so dry and forms a light dough. Mix in the vanilla extract, coconut oil and oat milk.

Pop the almond flour, tapioca flour, coconut flour, coconut sugar, baking powder and bicarb into a bowl. Stir the dry ingredients well.

Combine the two mixtures well and then gently fold the whites into the batter. Do this with a metal spoon and be gentle as the whites will help you keep the mixture light and your donuts fluffy.

Place the dough into a non stick donut shaped tray and bake for 20-25 mins.

Once they are done, remove from the oven and allow to cool completely.

Decorate to your hearts content and enjoy !! They will keep for a couple of days so don’t feel under pressure to eat them all at once - lol

PS : Whenever I make food I have one little person watch my every move, he doesn’t miss a chance to taste test any spillage or in this case taste the dough from the bowl. Yep .. think Milo approves.
