Tofu with Peach Salsa, Baby Potatoes & Thyme

All I can say is HOT Hot hot ..

The salsa in this recipe is absolutely delicious, makes my taste buds tingle with the combination of flavours, this is a must try !

Makes 2 servings.

You will need the following ingredients:

500g Baby New Potatoes

1 Bunch Lemon Thyme

Salsa:

  • 1 Peach, chopped

  • 1/2 Small Red Onion, chopped

  • 1 Small Clove Garlic, minced

  • Juice of 1 Lemon

  • 2 Teaspoons Dried Oregano

  • Himalayan Rock Salt & Black Pepper to taste

  • 1 Bunch Fresh Coriander

Combine the peach, pepper, red onion, garlic, lemon juice, oregano, coriander, salt & pepper. Mix well and allow it to settle.

Marinade for Tofu:

  • Juice of 1 Lemon

  • 2 Tablespoons Olive Oil

  • 1 Teaspoon Paprika

  • 2 Tablespoons Coconut Oil / Butter

  • 300g Tofu (you could substitute this with white fish)

Whisk together the lemon juice, oil and paprika, and marinade in a bowl for 15 minutes. Then heat a pan adding the coconut oil / butter, pop the tofu into the pan and cook evenly, turning gently until all sides are browned and crispy.

Cook the potatoes, season with salt & pepper, allow to cool. Sprinkle Thyme over the top.

Serve with potatoes and salsa. So yum ! Hope you enjoy.
