Tofu Teriyaki Rice Bowl

Tofu in a teriyaki sauce is magic ! I love this dish, it looks so simple on the plate and punches a real surprise in your mouth when the flavours combine. Makes 2 servings.You will need the following ingredients:1 Tablespoon Ginger, minced1 Garlic Clove, minced1 Teaspoon Sesame Oil2 Tablespoons Liquid Aminos1 Tablespoon Honey1 Cup Brown Rice, cooked2 Handfuls Baby Spinach400g Marinated Tofu, cubed1 Tablespoon Coconut Oil1 Avocado, sliced1 Tablespoon Sesame SeedsIn a small saucepan bring the sesame oil, coconut aminos, garlic, ginger, honey and sesame seeds to a gentle boil. Lower the heat and let the mixture simmer for 5 minutes or until slightly thickened.Cook the rice and steam the spinach.Pop the tofu into the pan with the teriyaki sauce and cook each side until crispy. Place the spinach, rice and avocado onto a plate, add the tofu pieces and pour the remaining marinade over it. Season and enjoy.
