Simple ‘Chicken’ Salad

Makes 3-4 Servings

Surprisingly simple & delicious salad, takes 15 mins to prepare and is sooooo satisfying. I love it.

You will need the following:

  • 1 Tablespoon Coconut Oil / Butter

  • 300g ‘Chicken’ Pieces - I use a chicken substitute.

  • 1 Lettuce or Equivalent Leafy Greens, Spinach, Kale or mixed greens

  • 10-15 Cherry Tomatoes

  • 1 Avocado Chopped

  • 1 Yellow / Orange Pepper, sliced

  • 6 Baby Cucumbers, sliced

  • Small Handful Olives

  • 1/4 Red Onion, chopped

  • 2 Tablespoons Olive Oil

  • 1 Teaspoon Paprika

  • 1 Teaspoon Turmeric

  • Juice of 1 Lemon

    Cook the ‘chicken’ in coconut oil, season with paprika and turmeric. Remove from the heat and once it's cooled. In a large bowl, combine the chicken, greens, tomato, avocado, pepper, cucumber, olives and onion.

    Top with olive oil, lemon juice and seasoning.

Combine well and serve.
